The Food and Environmental Hygiene Department of the Government of the Hong Kong Special Administrative Region of China and Hong Kong has released microbiological guidelines concerning food.
The purpose of this set of guidelines is to provide assistance to health officers in the interpretation of microbiological analysis of foods and give recommendations on the appropriate follow-up action to monitor and control food safety.
The criteria defined on these guidelines are:
- Ready-to-eat food in general - Aerobic colony count (ACC) and Hygiene indicator organisms
- Ready-to-eat food in general - specific foodborne pathogens
- Specific food items are listed in Chapter I to III of the Guidelines respectively
