The European Food Safety Authority (EFSA) has identified Safe intake level for glutamic acid and glutamates used as food additives.
This document establishes an acceptable daily intake (ADI) of glutamic acid and glutamates used as food additives of 30 mg/kg body weight per day. The document applies to all six of these additives, namely: glutamic acid (E 620), sodium glutamate (E 621), potassium glutamate (E 622), calcium glutamate (E 623), ammonium glutamate (E 624) and magnesium glutamate (E 625).
